Each room has a wine list of about thirty bottles. We taste every bottle before it goes on. We meet the grower where we can. We do not list a wine we have not drunk at our own table.
A short list is honest. It says: these are the wines we know. A long list says: we have a warehouse. We do not have a warehouse.
We change the list with the season. We do not put a heavy red on in August. We do not put a light rose on in January. We change about a third of the list every quarter.
